Selected grapes from our own vineyards (4000 vines per hectare )are picked by hand in small boxes of 15kg max. during the morning hours only, to prevent high temperatures and unwanted fermentation. Grapes are stored in a cold cellar ( 4oC) for 3 days. The result is a water evaporation and concentration of aromas and flavors. The grapes are sorted again at the winery, destalked and lightly crushed, before being placed in temperature controlled inox tanks where pelicular maceration starts at 8oC. The result is then pressed at a maximum of 0.8 bars in a pneumatic press that presses only the grapes that are in optimum maturation state. The must is kept then for 24 hours and a natural decantation happens. Only the clean must goes to American oak barrels of 400 litres to start fermentation at a controlled temperature of 14o'C for 15 days. The wine is kept on its lees until bottling, at the beginning of November.

Hispano Suizas' 2008 Sauvignon Blanc was barrel-fermented and then aged in stainless steel. It surrenders an exotic perfume of baking spices, mango, lemon, and grapefruit. Rich and round on the palate with the oak nicely integrated, this concentrated savory Sauvignon will drink well for another 3 years.
